A First-Timer’s Guide to Our Roswell Bakery

If you’ve found us recently, you’re probably wondering one thing:

What should I actually order?

Because yes, we’re a bakery in Roswell, GA, but we don’t have a big glass case with 30 options lined up. What we bake changes a little week to week, and everything is made in smaller batches.

So instead of overthinking it, let me walk you through it the way I would if you were standing at the cart asking, “okay… what’s good?”

What you’ll learn here

In this post, I’ll walk you through how our menu works, what we’re known for, and what I’d actually recommend ordering if it’s you’re new.

First, a quick hello

We’re Mind Your Biscuits Bakeshop, a small cottage bakery based in Roswell, GA. Everything is baked in our home kitchen and shared through our Cookie Cart (think roadside stand), local markets, and pre-orders.

How the menu works

At any given time, our menu is usually a mix of cookies, a few bakery items like scones or muffins, sourdough bread, and a few pantry items. Each week’s menu is shared ahead of our bake drop in our newsletter and on social (Facebook, Instagram), where you’ll also find our upcoming schedule.

Not everything shows up every week, and that’s intentional. We bake in small batches so we can keep quality high and still have a little flexibility in what we offer. This keeps both our creativity and your appetite fresh.

If you’re someone who likes to plan ahead, pre-ordering is your best bet. If you’re more of a “see what looks good” person, just know the popular items tend to go first.

Cookies (eat first)

If it’s your first time, get the chocolate chip.

I know that sounds obvious, but it’s our bestseller for a reason. It’s the one we’ve made the most, and the one people come back for.

From there, we usually have a few other options alongside it. There’s almost always something a little unexpected, like peanut butter miso, and something more classic like a confetti cake or snickerdoodle variation.

We keep it to about five flavors so it doesn’t feel overwhelming, and they rotate depending on the season and what we’re baking that week.

If you’re unsure, grab one safe choice and one wildcard. That’s usually how people find their favorite.

Gluten-free? While we use plenty of flour in our bakery, we do offer a gluten-friendly option. Our coconut macaroons are made with natural gluten-free ingredients.

Scones and Pastries

This is the part of the menu that changes the most.

We almost always have at least one scone, sometimes two. Orange cardamom has been a staple, and lately, the lemon poppyseed has been getting a lot of attention.

Beyond that, it depends on the week.

You might see muffins, cinnamon rolls, brownies, or something new we decided to bring out. These are smaller batches, so they’re usually among the first to sell out.

If you like trying something different each time, this is the section to pay attention to.

Our Sourdough

Bread is actually where this all started.

Before the cookies, before the cart, the Roswell bakery, it was just me and our sourdough starter, Marge. She’s been around for a while now and at this point feels like part of the family. She gets fed more consistently than most of us and somehow keeps turning out loaves that disappear faster than we expect.

Our sourdough is simple and consistent, but it’s the kind of thing people tear into before they even get home. I’ve watched someone eat half a loaf in one sitting, so fair warning.

There’s always a classic loaf—just flour, water, and salt—and then we usually mix in something a little different depending on the week. Lemon rosemary and garlic parmesan are two of my favorites, and the kids will always go for the chocolate brownie loaf.

We also rotate in things like English muffins, bagels, and dinner rolls (especially around the holidays), and we’re slowly adding more as we go.

Pantry Items (easy to miss)

These are the take-home extras, jams, mixes, the things you might not have come for but end up really glad you grabbed.

They’re easy to overlook when you’re focused on cookies and whatever just came out of the oven, but they’re the kinds of items that stick with you after. The ones you use later in the week and think, okay, I need more of that.

We use local fruit for all our jams and warning; the blackberry goes fast. The pancake and French toast mixes are a simple and delicious way to make mornings feel extra special.

They’re not flashy, but they’re the kind of things you end up keeping on hand once you’ve tried them.

A Quick Note on Ingredients

Everything we make starts with simple, high-quality ingredients.

We use organic butter and dairy, eggs from a local farmer down the road from our Roswell bakery, and King Arthur flour, which is unbleached, non-GMO, and free of additives and preservatives. That means no bleaching agents, no bromate, and nothing unnecessary added in.

It’s also one of the most consistent flours out there, which matters more than people realize. When you’re baking week after week, consistency is everything. It’s what keeps a cookie tasting like the cookie every single time, instead of great one week and off the next.

We get asked about organic flour a lot. The short version is that consistency has been a challenge, as most organic flour comes to mills from multiple farms. Fresh milled is something we’d love to grow into over time, but for now, King Arthur is the best balance of quality and reliability.

Beyond flour, our spices and extracts are sustainably sourced, and when we can, we’re using fruit from our garden or the local farmers’ market.

We keep things intentionally simple. No fillers, no shortcuts, nothing you can’t recognize. If you’re curious, we share more about what you won’t find in our baked goods here.

If you’re coming for the first time, here’s what I’d do:

  • Start with a chocolate chip.
  • Pick one rotating flavor.
  • Add a scone or something from the bakery section.
  • If bread is available, grab a loaf.

That gives you a pretty good feel for everything we do. You don’t need to overthink it. Start simple, try something new, and you’ll figure out your favorites pretty quickly.
